Beef Stroganoff

4 pounds lean beef flank steaks, cut into thin strips
2 teaspoons kosher salt
1/4 teaspoon freshly ground black pepper
1 cup onion, finely chopped
4 cups water
4 cubes beef bouillon
1 pound mushrooms, sliced
2 tablespoons cornstarch
2 cups low fat yogurt
6 tablespoons tomato paste
2 tablespoons Worcestershire sauce


Dredge the meat in a mixture of salt and pepper and brown on a rack under a broiler. Place the meat in a deep baking dish. Add the onion, water, bouillon cubes and mushrooms. Cover and simmer for 25 minutes. Add cornstarch and stir until thickened.

Blend the remaining ingredients, add to the meat and stir. Serve over noodles.
