Rich and cheesy, these won't last long!

    2 pounds whole mushrooms, stems removed and reserved
   1/2 cup onions, minced
   8 slices bacon, crisply cooked and crumbled, drippings reserved
   1 (12-ounce) package cream cheese, softened
   1 cup shredded Cheddar cheese

Chop stems of mushrooms; mix in onion. Sauté until tender; stir in bacon. Reduce heat; stir in cream cheese until melted. Remove from heat; spoon cheese mixture into mushroom caps. Arrange side-by-side on a greased baking sheet; sprinkle with Cheddar cheese. Bake at 350 degrees for 15 minutes.
