Party Summer Salad

Ingredients

Summer Salad Dressing:
1 (8-ounce) package cream cheese, softened
1/2 cup frozen limeade or lemonade concentrate
1/3 cup powdered sugar
1/2 (8-ounce) carton Cool Whip

Fruits:
2 cups cut-up honeydew melon
2 cups blueberries
2 ripe medium mangoes, peeled, cut up
1 quart strawberries, quartered
3 cups cut-up cantaloupe
mint leaves

Directions:

Summer Salad Dressing:
Put dips and spreads and creamy salad dressings in edible fruit or “veggie bowls.” Hollow out bell peppers, tomatoes, cabbages . . . you can even use leafy lettuce or endive cups. With mixer, beat cream cheese, concentrate, and powdered sugar on medium-high 3 minutes or until smooth. Fold in Cool whip.

Fruits:
Layer honeydew melon, blueberries, and mangoes in trifle bowl. Spread half the summer salad dressing over. Continue to layer strawberries and cantaloupe; spread remaining dressing mixture on top. Garnish with mint leaves.
