Good, Good Goulash

Ingredients

1 pound beef stew meat, cut into 3/4-inch cubes
2 medium onions, cut into wedges
1 tablespoon oil
2 1/2 cups beef broth
1 (14 1/2-ounce) can diced Italian tomatoes
1 tablespoon paprika
1/4 teaspoon thyme
1/4 teaspoon pepper
3 medium potatoes, peeled, cubed
2 tablespoons snipped fresh parsley

Directions:

Cook meat and onions in oil in dutch oven until meat is brown. Stir in broth, tomatoes, paprika, thyme, and pepper. Bring to a boil; reduce heat. Cover and simmer 1 hour. Add potatoes. Cover and cook 25–35 minutes longer or till meat and potatoes are tender. Uncover the last 10 minutes to slightly thicken the mixture. Stir in parsley just before serving.
