Cabbage Pepper Slaw

Ingredients

Cabbage Dressing:
1/4 cup oil
2 tablespoons red wine vinegar
1 clove garlic, minced
1 tablespoon each: fresh oregano, basil, parsley
1/2 teaspoon freshly ground black pepper
1/2 teaspoon salt

Cabbage Salad:
1/2 small head cabbage, finely shredded
1 bell pepper, julienned
1/4 cup chopped purple onion

Directions:

Cabbage Dressing:
Whisk ingredients together. Pour over Cabbage salad; toss thoroughly. Cover and refrigerate. Best after at least 4 hours; good for 4 days.

Cabbage Salad:
Toss vegetables in bowl.
