Bean And Potato Soup

Serves: 6
Total Calories: 330


1 cup Anasazi beans
1 pound leftover ham chunks
2 potatoes, diced
1 onion, diced
2 ribs celery, diced
seasoning to taste


Soak beans overnight. Put beans in pot and add water to more than cover the beans. Add ham chunks and simmer for 1 1/2 hours. Add the diced vegetables and seasoning. Cook until vegetables are tender. Add liquid whenever needed for desired consistency. Serve with corn muffins.
