Roasted Almonds With Sea Salt |

Serves: 10
Makes 5 cups
Make this little nosh for any size crowd. As the almonds roast (which seems to happen instantly), the house fills with a delicious buttery odor. And if they're not consumed in one night, they will keep beautifully in an airtight container for up to 2 weeks.
5 cups whole unblanched almonds
3 tablespoons olive oil
2 teaspoons sea salt

Preheat the oven to 375°F.
In a large bowl, combine all the ingredients. Toss until the nuts are coated with the olive oil and salt.
Spread the almonds on 2 baking sheets. Roast for 8 to 10 minutes, or until golden brown. Transfer to paper towels and let cool for 10 minutes.
Transfer the nuts to a decorative bowl and serve.
