This is my family's favorite meat loaf, always cooked as part of an oven meal along with baked or scalloped potatoes, a vegetable such as carrots or turnips in a covered casserole, and apple crisp or some kind of fruit dessert. Always, that is, until the microwave oven came along. Now I make meat loaf whether I want the rest of the oven meal or not. We like meat loaf with potatoe salad and hope there is enough left for sandwiches the next day.
1 1/2 pounds ground beef or turkey
2/3 cup rolled oats
2/3 cup skim milk (use 3/4 cup with turkey)
1/2 cup egg substitute
1 small onion, chopped
1/2-1 teaspoon salt (optional)
1/8 teaspoon pepper (use a litte more with turkey)
1/2 teaspoon sage (use 3/4 tsp. with turkey)
Piquant Sauce:
3 tablespoons brown sugar or sugar substitute
1/4 cup ketchup
1/4 teaspoon nutmeg (use 1/3 tsp. with turkey)
1 teaspoon dry mustard (use 1 1/4 tsp. with turkey)
1. Combine all meatloaf ingredients and mix thoroughly. Press into microwave ring mold or make your own by putting a custard cup in the center of a large, round casserole and packing the meat loaf around the edges.
2. Combine sauce ingredients and spread over top of meat loaf.
3. Microwave 12-14 minutes on HIGH
4. Let stand 10 minutes before serving.
Balance with lower-fat dished on days you use this recipe.
