Purchased pie shells are a wonderful convenience, and while they may not have the same qualities as homemade, they certainly have their place in a busy person's kitchen. One caution in using such products-the capacity is not the same as the corresponding size in a homemade pie shell. Commercial products are measured differently, so a 9-inch frozen pie shell will be smaller. Recipes for a 9-inch pie filling will almost always overfill a commercial crust. Keep this in mind when substituting. A deep-dish pie shell will increase the capacity but still may require some adjustments. Unless otherwise specified, all my recipes use homemade pie shells.
