2 cups coconut shredded
1/4 cup butter or margarine, melted
1 cup butter or margarine, softened
1 cup sugar
2 eggs
1/2 cup walnuts chopped (optional)
2 ounces unsweetened baking chocolate melted
2 tablespoons instant coffee
1 1/2 tablespoons brandy or rum
Chopped walnuts (optional)
Preheat oven to 375° F. In a small bowl mix coconut and butter or margarine until coconut is well coated. Press mixture against bottom and sides of a 9-inch pie plate. Bake for 8 to 10 minutes or until edges are golden. Cool on a wire rack. Chill.
In a small mixer bowl at medium speed beat butter or margarine and sugar until fluffy. Add one egg at a time, beating for 3 minutes after each addition.
Stir in optional nuts, chocolate, coffee powder and brandy or rum. Spoon into pie shell and chill at least 2 hours.
To serve, sprinkle with nuts, if desired.
