1 cup sugar
2 1/2 tablespoons cornstarch
1/2 cup water
1 1/2 quarts strawberries fresh rinsed, hulled and patted dry with paper towels
1 tablespoon butter real
Few drops of red food color (optional)
1 baked 9" pie shell
Sweetened whipped cream
In a medium saucepan mix sugar and cornstarch. Stir in water and 1/2 quart strawberries. Crush berries well. Stirring over medium heat, bring to a boil and boil for 1 to 2 minutes or until thickened. Remove from heat.
Stir in butter and optional food color. Press through a sieve and cool.
Place remaining strawberries in pie shell. Pour glaze over berries. Refrigerate at least 3 hours before serving.
Serve with whipped cream.
