Molasses Cake With Orange Sauce

2 cups flour
2 teaspoons cinnamon ground
1 teaspoon ginger ground
1 teaspoon mace ground
1 teaspoon baking soda
1/4 teaspoon salt
1 cup molasses light
1 cup water warm
1/2 cup butter softened
1 egg
1 teaspoon vanilla extract
Orange Sauce (see below)

3/4 cup sugar
3/4 cup orange juice concentrate
3/4 cup butter cut in pieces

1/2 cup sugar
2 tablespoons cornstarch
1/8 teaspoon salt
1 cup water
2 teaspoons orange rinds grated


* (Note: Cake recipe in both calendars is the same. The Orange Sauce recipes are different. See below.) Preheat oven to 350°. Grease and flour an 8 x 8 x 2-inch baking pan. In a large mixer bowl, mix flour, cinnamon, ginger, mace, baking soda and salt.

Add molasses, water, butter, egg and vanilla. Beat at low speed until blended. Beat at medium-low speed for 1 minute. Pour into pan. Bake for 40 to 45 minutes or until a wooden pick inserted in center comes out clean. Cool in pan on a wire rack for 30 to 40 minutes. Serve warm with Orange Sauce. Makes 9 servings.

Orange Sauce
*In a medium skillet, place sugar, orange juice and butter. Cook and stir over medium-low heat until butter melts. Simmer, without stirring, for 5 minutes or until mixture is golden and syrupy. Serve hot. Makes about 1 1/2 cups.

Orange Sauce in 1985 Calendar:

*In a 1-quart saucepan, mix sugar, cornstarch and salt. Add water and stir until smooth. Stir in orange rind. Cook and stir over medium heat until mixture comes to a boil and boil for 1 minute. Remove from heat. Stir in orange juice, butter, lemon juice and vanilla. Serve hot. Makes 1 1/2 cups.
