2 beets large beets, peeled and chopped or 2 cups canned beets
1 cup red cabbage chopped or green cabbage
2 onions medium, chopped
3 10 1/2-ounce cans beef broth
Salt and pepper to taste
Sour cream Dairy
Simmer vegetables in the broth until tender, about 30 to 40 minutes. Add salt and pepper to taste. Ladle into heavy pottery bowls and top with a tablespoon of sour cream on each serving.
