3 10 1/2-ounce cans beef consommé (gelatin added)
1 cucumber medium or 2 small, peeled, seeded and minced
1/2 green bell pepper minced
1 tablespoon chives minced or scallions (fresh or frozen
Fresh parsley
Mix the ingredients well and ladle into soup cups or plates. Chill thoroughly, 3 or 4 hours, until set. Garnish with a tiny sprig of parsley before serving.
Note: Be sure to buy consommé which states "gelatin added" on the label.
