Squash Morelle

Ingredients

2 pounds yellow squash, sliced
1 cup chopped onion
1 teaspoon butter
2 eggs, beaten
1/2 cup sour cream
2 tablespoons butter, softened
1 tablespoon sugar
1 1/2 teaspoons salt
1/2 cup shredded mozzarella cheese
1/2 cup ground almonds

Directions:

Place squash and onion in a 2-quart glass or ceramic casserole dish. Dot with butter and cover tightly with plastic wrap. Microwave on HIGH (100%) 16 minutes. Shake dish once or twice to rearrange contents. (Shaking eliminates removing the cover.) Drain and mash.

Mix together eggs, sour cream, butter, sugar, salt, and cheese and stir into squash. Microwave on HIGH (100%) 4 minutes.

Sprinkle with ground almonds and microwave on HIGH (100%) 4 minutes more
