Mississippi Fried Chicken

Ingredients

6 boneless, skinless chicken breast halves
1 Salt and pepper to taste
1 cup all-purpose flour
1/2 teaspoon salt
1/2 teaspoon black pepper
1 teaspoon baking powder
1 Cooking oil

Directions:

In colander, rinse chicken breasts. Salt and pepper. Let stand to drain. In plastic sack, combine flour, salt, pepper, and baking powder. Shake chicken in this mixture until well coated. Put chicken in refrigerator for 1/2 – 6 hours.

Put 1 inch cooking oil in large skillet. Heat to medium high. Place chicken pieces in skillet. When they are hot and cooking well, turn heat to medium low. Cook 7–10 minutes on each side or until well browned.
