Marinated Pork Tenders on the Grill

1/2 cup soy sauce
1/2 cup dry sherry
2 cloves garlic, minced
1 tablespoon dry mustard
1 teaspoon thyme
1 teaspoon ginger
5 pounds pork tenders


About 24 hours ahead, mix together all marinade ingredients. Put tenders in refrigerator overnight, shifting the meat in the marinade from time to time.

When the fire is ready, remove meat from marinade. Cook on grill for about an hour, depending on size of tenders. Base with marinade while cooking.

Fun Fact: Alabama is home to Dreamland Bar-B-Q Ribs, which serves what many people consider some of the best ribs in the world. In the original restaurant in Tuscaloosa, there are no side dishes . . . only ribs, bread, and sauce. The original restaurant was started by John “Big Daddy” Bishop (whose pipe-smoking likeness you see on their logo) in 1958, and was little more than a shack built around an outdoor-style pit barbecue.
