Creamy Spinach Casserole

2 cups bite-size, crispy rice cereal squares
1 teaspoon onion powder
3 tablespoons melted butter
1 (8-ounce) package cream cheese
1 (5-ounce) can evaporated milk
2 teaspoons lemon juice
3/4 teaspoon seasoning salt
1 Dash of pepper
1 egg, beaten
1 (8-ounce) can sliced mushrooms, reserve 1/4 of liquid
2 (10-ounce) packages frozen spinach, cooked and drained


Preheat oven to 350°. Combine cereal, onion powder, and butter, and set aside. In a saucepan, combine cream cheese, milk, lemon juice, seasoning salt, pepper, and liquid reserved from mushrooms. Cook and stir on low until smooth. Add egg; cook and stir constantly until thickened. Stir in mushrooms and spinach. Pour into 1 1/2-quart casserole. Add cereal topping. Bake for 15–20 minutes.
