Chicken Pie-Pinwheel Crust

4 pounds game hen
1 tablespoon salt
2 cups water
3 tablespoons flour
1 1/2 cups milk
1 1/2 cups chicken broth
1 tablespoon lemon juice
3 tablespoons shortening
1 1/2 cups all-purpose flour
3 tablespoons baking powder
1/2 teaspoon salt
1/2 cup milk
3 pimientos, chopped
3/4 cup grated Cheddar cheese


Boil hen in salted water until done. Remove from bones. Place chicken in a 3-quart casserole dish. Make a sauce by blending flour, milk, and broth. Cook slowly until thick. Add lemon juice and pour over chicken in casserole. Set aside while you make Crust.

Cut shortening into flour to which baking powder and salt has been added. Add milk. Form a ball and chill 30 minutes. Roll out 1/4-inch thick. Spread pimento and grated cheese over pastry and roll up, starting at the short end. Slice. Place slices over chicken mixture and bake at 400° for 40 minutes, or until brown.
