Baked Chicken Breasts 1

Serves: 5
Total Calories: 596


1/2 cup grated Parmesan cheese
2 cups seasoned bread crumbs
3 tablespoons sesame seeds
3 chicken breasts
1/2 cup butter, melted
Cumberland Sauce:
1 cup red currant jelly
1 (6-ounce) can frozen orange juice
4 tablespoons dry sherry
1 teaspoon dry mustard
1/4 teaspoon ginger
1/4 teaspoon hot pepper sauce


Mix first three above ingredients. Dip pieces of chicken breasts into melted butter and then into crumb mixture. (Can freeze or refrigerate until ready to cook.) Bring to room temperature to cook. Place in shallow pan, dot with butter, and bake 1 hour at 350°. Serve with Cumberland Sauce.

Cumberland Sauce:
Combine and simmer until smooth.
