1. Sift dry ingredients. Beat eggs with milk (a little) add flour, salt and sugar to beaten eggs alternately with milk and water.
2. Wait one hour, then add melted butter last.
3. Heat fry pan until drops of water sizzle. For first crepe, add 1 teaspoon butter to fry pan. For the rest, just lightly brush pan with butter.
4. Fill with your favorite shrimp, chicken or dessert filling.
To Make Crepes: Pour enough batter (consistency of cream) to lightly cover pan, turning in every direction to spread. Cook 1 minute lift side with fork and turn with cake turner cook 1 minute.
