Smashed Potatoes

4 redskin potatoes, quartered
1 tablespoon butter
1/4 cup milk, warmed
1 salt and pepper to taste


Cover potatoes with water in a saucepan; bring to a boil over medium heat. Reduce heat and simmer for 15 to 20 minutes, until tender; drain. Mash potatoes coarsely. Stir in butter and milk; add salt and pepper to taste.
