Arrange chicken pieces skin-side down on a broiler pan; set aside. Mix butter, lemon juice and tarragon in a small bowl. Brush mixture over chicken; add salt and pepper to taste. Broil for 15 minutes, until lightly browned. Turn chicken over; brush with remaining mixture and broil an additional 10 to 15 minutes, until chicken juices run clear when pierced.
Tip: Add a zesty marinade to plastic zipping bags of uncooked chicken and freeze. The chicken will be deliciously seasoned when you thaw it for cooking.
