Crab Stuffed Dutch Oven Mushrooms

Ingredients

24 medium Crimini or button mushrooms, stems and gills removed
4 ounces crab meat
2 slices bacon, cooked, broken into bits
1/2 cup fresh bread crumbs or crushed croutons
2 tablespoons Parmesan cheese, grated
salt and pepper to taste
3 tablespoons mayonnaise
1 tablespoon Dijon style mustard

Directions:

Remove and chop the stems from the mushrooms, then scoop out the dark brown gills with a small spoon and discard the gills.

In a medium bowl, combine chopped stems and remaining ingredients. Stir with a fork to combine remaining ingredients, add a little mayo if the stuffing looks a little dry. The stuffing should look similar to cooked dressing.

Stuff each mushroom with 1 to 2 Tbs. stuffing and place into an oiled 14-inch Dutch oven or use two 12-inch Dutch ovens. Cover and bake at 375°F for 20 minutes.
