Bacon Wrapped Scallops

Ingredients

36 large bay scallops, about the size of a 50 cent piece
18 slices apple wood smoked bacon, cut in half slices, blanched (half cooked)
36 toothpicks
2 tablespoons rendered bacon fat from blanching

Directions:

Cut the bacon slices in half to make 2 short slices out of each whole slice. Fry the bacon in a Dutch oven in batches for about 4 to 5 minutes to render the fat and lightly brown the bacon but not crisp. The bacon needs to be flexible enough to be wrapped around the scallops. Wrap each scallop with one, half slice of bacon and push a tooth pick through the ends of the bacon slice to hold the bacon onto the sides of the scallop. Place 18 scallops into a Dutch oven with 2 Tbs. bacon fat spread across the bottom and bake 12 to 15 minutes at 350°. Bake the scallops in 2 batches so there is enough room between each scallop so they don't touch. Serve on the Dutch oven lid.
