This recipe is higher in fat than most in this cookbook. But not all fat is bad! We need fat to provide energy, insulation and protection for the body. For some cancer patients, though, high-fat foods may cause intestinal distress or nausea and should be avoided.

"When I needed to reduce the fat in this or any recipe, I used less mayonnaise and cheese than was called for. Though I know some fat in our diets is important, I felt better during treatments when I knew my diet was not high in fat." -MARY W.
