Layered Chicken Salad

Ingredients

1 (10-ounce) bag salad mix (about 8 cups)
1 small zucchini, thinly sliced
1 can (10 ounces) chunk chicken, drained
1/4 cup chopped red onion
1/2 cup pimiento-stuffed salad olives
1/2 cup mayonnaise or salad dressing
3/4 cup shredded reduced-fat Cheddar cheese (3 ounces)
1 cup frozen green peas, rinsed and drained
1 medium tomato, cut into wedges

Directions:

1. Layer salad mix, zucchini, chicken, onion and olives in large bowl.

2. Spread mayonnaise over olives, sealing to edge of bowl. Sprinkle with cheese and peas. Cover and refrigerate at least 2 hours but no longer than 24 hours.

3. Just before serving, add tomato and toss salad.

This recipe is higher in fat than most in this cookbook. But not all fat is bad! We need fat to provide energy, insulation and protection for the body. For some cancer patients, though, high-fat foods may cause intestinal distress or nausea and should be avoided.
