4 boneless, skinless chicken breasts halves (about 1 1/4 pounds)
2 slices (1/2 ounce each) provolone cheese, cut in half
4 thin slices pastrami
1/3 cup seasoned dry bread crumbs
1/4 cup grated romano or Parmesan cheese
2 tablespoons finely chopped fresh parsley
1/4 cup milk

1. Heat oven to 425°. Grease square pan, 8 x 8 x 2 inches. Flatten each chicken breast half to 1/4-inch thickness between sheets of plastic wrap or waxed paper.

2. Place piece of provolone cheese and slice of pastrami on each chicken piece. Fold long sides of each chicken piece over pastrami. Roll up chicken from short side secure with toothpick.

3. Mix bread crumbs, Romano cheese and parsley. Dip chicken rolls into milk, then coat evenly with bread crumb mixture. Place seam sides down in pan.

4. Bake uncovered about 30 minutes or until chicken is no longer pink in center.

TO MAKE AHEAD: Freeze unbaked chicken rolls uncovered about 1 hour or until firm. Wrap tightly and label. Freeze no longer than 2 months. About 1 1/4 hours before serving, heat oven to 375°. Bake uncovered about 50 minutes or until chicken is no longer pink in center.

Chicken is a good source of vitamin B6, pyridoxine. Vitamin B6 is important for helping the body break down proteins to free the smaller protein components, called amino acids, that the body needs.

"A meal that I can serve to my family or company and eat with them helps me feel like I am still able to be a normal mom. This meal doesn't take a lot of energy to prepare, which is important when you get fatigued from cancer treatments." -ANNE R.
