Rolled Chicken with Mushroom Sauce (Frango enrolado com molho de cogumelos)

Ingredients

5 boneless skinless chicken breast halves
10 slices half and half
1/2 cup sliced green olives
3 boiled eggs (grated)
1/4 cup fresh mushrooms
1 medium onion finely chopped
1/2 cup flour
1/2 cup water
2 tablespoons butter

Directions:

Cut each chicken breast in half. Flatten and fill each chicken breast with one slice of ham, olives, and eggs. Roll and fasten with tooth pick. Season with salt and pepper and fry in 1 tablespoon butter, turning occasionally until golden brown. Reduce heat and cover frying pan to steam (about 15 min.) turning occasionally so they breasts will not stick or burn.

If you prefer you could also cook in oven. In this case, you could place the chicken breasts in a baking dish and pour melted butter over the top.

In another pan, brown the onion and mushrooms in 1 tablespoon melted butter. Mix in the flour and pour over the chicken and finish cooking.
