Palmito Soufflé


Serves: 2

Ingredients

2 tablespoons butter
2 tablespoons flour
1 cup milk
3 eggs separated and beaten separately
4 tablespoons Parmesan cheese
1/4 tablespoon salt
1 (14-ounce) can cut up heart of palm or palmitos

Directions:

Melt butter in a frying pan, add flour, and cook until golden. Add milk and let thicken.

Remove from the heat and add beaten egg yolks, 2 tablespoons Parmesan cheese, salt and palmitos. Fold in egg whites.

Place in a well greased tube pan and sprinkle with Parmesan cheese.

When brown, remove from the oven and serve hot.

VARIATION: this recipe could also be made with eggplant or asparagus.
