Mock Stuffed Cabbage

Ingredients

1 small head cabbage, shredded
1 1/2 - 2 pounds ground beef, turkey, or chicken
1 egg
3/4 cup bread crumbs
1/2 teaspoon garlic powder
1 (15-ounce) can tomato sauce
8 - 12 ounces whole or "crushed berry" cranberry sauce
2 tablespoons brown sugar

Directions:

Place shredded cabbage in a Dutch oven. Combine ground beef, egg, bread crumbs, and garlic. Shape into meatballs and place on top of cabbage. Combine tomato sauce, cranberry sauce, and brown sugar and pour over meatballs. Cover and cook on top of stove or in a 350° oven for 1 hour. Serve with noodles or rice.

Hint:
This tastes almost like stuffed cabbage, but without all the work! To keep this recipe as low in cholesterol as possible, substitute ground chicken or turkey for the beef and use an egg substitute or 2 egg whites instead of the whole egg. This freezes well.
