Dilled Haddock Parmesan

Serves: 6

1 cup sour cream
1/4 cup freshly grated Parmesan cheese
1/4 cup grated Swiss cheese
1 teaspoon fresh minced dill (or 1/2 teaspoon dried)
1/4 cup very soft butter
salt and pepper to taste
3 pounds frozen haddock filets
sprinkle of sweet Hungarian paprika
6 sprigs of dill for garnish
6 lemons wedges


In a small bowl, mix the sour cream, cheeses, minced dill, and butter. Add salt and pepper to taste. Set aside.

Preheat oven to 375°. Cut fillets into 6 individual servings and place them on a buttered baking sheet. Top each piece with cheese mixture and bake for 15–20 minutes. Sprinkle lightly with paprika, garnish with dill sprig, and serve with a lemon wedge.
