Ricotta Almond Flan

Ingredients

1 1/2 cups slivered almonds
1 (15-ounce) carton ricotta cheese
3/4 cup sugar
6 large eggs, beaten
grated zest of 2 large orange
1/4 cup dark rum
1 teaspoon vanilla extract
1/2 teaspoon nutmeg

Directions:

Spread almonds on a baking sheet and bake at 300° until lightly browned, about 10 minutes. Remove from oven and cool. Increase oven temperature to 325°.

Grind almonds fine in a food processor, then blend in ricotta, sugar, eggs, orange zest, rum, vanilla, and nutmeg. Butter a deep pie dish, pour in ricotta mixture, and bake for 30–35 minutes or until center of flan is set. Cool before cutting into wedges.
