Quiche

Ingredients

3 cups shredded potatoes
3 tablespoons oil
salt and pepper

Mix:
1/2 pound crisp bacon or diced ham, or both
1 1/2 cups grated Swiss or Cheddar cheese
1 cup cottage cheese
1 cup Monterey or gruyére cheese
2 (4-ounce) cans green chilies, diced
1/2 teaspoon salt
1/2 teaspoon cayenne pepper
1/4 cup butter, melted
6 large eggs, well beaten

Directions:

Mix potatoes with oil, salt and pepper and spread in bottom and sides of 9x13-inch greased pan; bake at 375° for 10–15 minutes until it starts to brown. Set aside.

Mix:
After potatoes are brown, mix all other ingredients together. Pour over potatoes and bake until knife or toothpick comes out clean. Bake at 375° for 45–55 minutes. This can be baked ahead of time and just warmed in the microwave for 1–2 minutes. Keeps well in fridge for a week.
