Chilaquiles

Ingredients

2 medium onions, chopped
1 clove garlic, minced finely
2 cans mild, chopped green chilies
2 cans stewed tomatoes
2 stalks fresh celery, chopped
fresh cilantro sprig (optional)
salt and pepper to taste
1 dozen flour tortilla, quartered and softened in hot oil
2 pounds grated Monterey Jack cheese
3 cups sour cream for garnish

Directions:

Simmer all ingredients except tortillas and cheese. Salt and pepper to taste. Heat oil; dip pieces of quartered tortilla in hot oil until softened. Layer tortillas, sauce, and cheese to top of a 9x13-inch casserole dish. Place in oven at 350° for 15–20 minutes to heat thoroughly and melt cheese. Cut through like a cobbler and serve with sour cream on top. A wonderful brunch dish! (Can be prepared ahead of time and refrigerated up to 2 days. Heat at 350° for 1 hour to serve.)
