Beef Tortilla Pizza

Ingredients

1 pound ground beef
1 medium onion, chopped
1 teaspoon oregano
1 teaspoon ground cumin
1 teaspoon salt
4 large flour tortillas
4 teaspoons olive oil
1 medium tomato, chopped
Mexican toppings: cilantro, sliced olives, 1 cup Jack cheese, etc.

Directions:

Sauté beef with chopped onion. Pour off drippings. Sprinkle with oregano, cumin, and salt. Place tortillas on two large baking sheets. Lightly brush tortillas with olive oil. Bake in preheated 400° oven for 3 minutes. Remove from oven and top tortillas with beef mixture, then divide tomato and desired Mexican toppings over beef-covered tortillas. Bake at 400° for 12–14 minutes more. (If doing all 4 tortillas at once, rearrange baking sheets halfway through baking time.)
