Pancho Villa’s Favorite Quiche


Serves: 5

Yield: Makes 4 generous servings or 8 cocktail-size servings

Ingredients

1/4 cup chopped onion
1 tablespoon oil
1 pie shell (can be pre-made kind)
3 eggs
1 cup evaporated milk
1/2 teaspoon (or more if you like it) ground cumin
1 1/2 cups grated Jack cheese (although Mormon cheese from Chihuahua works best)
1 cup grated mild Cheddar cheese
1 (4-ounce) can chopped green chili

Directions:

Preheat oven to 325°. Sauté onion in oil. Line quiche or pie pan with pie crust. Brush crust with beaten egg white, then lightly beat remaining eggs with onion and other ingredients. Pour into pie crust. Form a collar around the edge of the pie crust by crimping aluminum foil (this keeps edges from burning). Bake at 325° for 40 minutes, or until knife inserted in center comes out clean.
