Grilled Texas Tequila Tuna

Ingredients

1/4 cup tequila
1/4 cup red wine vinegar
2 tablespoons lime juice
1 tablespoon ground red chili pepper
2 cloves finely chopped garlic
1 red bell pepper, finely chopped
2 pounds fresh tuna (4 steaks, approximately 3/4 inch thick)

Directions:

In a bowl, mix all ingredients together except tuna. Place tuna in shallow dish. Pour marinade over. Refrigerate for 1 hour. Remove tuna from marinade and reserve liquid. Place tuna on grill over medium hot coals, turning once. Cook until done, 6–7 minutes per side. Heat marinade to boiling in saucepan. Cook until bell pepper is tender. Serve over tuna.

Note: Alternative fish: swordfish and halibut.
