Ceviche II

Ingredients

1 pound fresh, sweet white fish (snapper, redfish, etc.)
juice of 3 lime, or enough to cover fish
1 teaspoon salt
1 tablespoon chopped fresh cilantro
3 serrano chile peppers (packed in vinegar), cut up
juice of 1 orange
2 tablespoons olive oil
1 large onion, finely chopped
2 fresh tomatoes, peeled and chopped

Directions:

Cut fish into thin bite-sized pieces. Combine lime juice, salt, cilantro, and peppers. Pour over fish. Be sure there is enough juice to cover fish. Marinate in refrigerator 4 hours. Add orange juice, oil, onion, and tomatoes. Serve in cups with juice and saltine crackers.
