A Santa Fe Soup


Serves: 2

Ingredients

1 avocado
8 ounces plain yogurt
1 (14 1/2-ounce) can chicken broth, or homemade broth
1 clove garlic, pressed
12 sprigs cilantro, Chinese parsley, or regular parsley, chopped
juice of 1/2 lemon
1 small green chile or jalapeño pepper, chopped
paprika

Directions:

Put all ingredients in blender, excluding paprika. Blend well. Chill several hours. Serve with paprika sprinkled on top. Good served with cucumber sandwiches. This will keep for several days. Do not freeze.
