Bloody Mary Soup

Ingredients

2 tablespoons butter
1 medium onion, diced
3 stalks celery, diced
2 tablespoons tomato purée
1 tablespoon sugar
5 cups v8 vegetable juice
1 tablespoon salt (optional)
2 teaspoons Worcestershire sauce
1/4 teaspoon pepper
1 tablespoon fresh lemon juice
4 ounces vodka

Directions:

Melt butter in large saucepan. Sauté onion and celery in butter over medium heat. Add tomato purée and sugar. Cook for one minute. Add V-8 juice and simmer for 8 minutes. Stir in remaining ingredients. Strain and serve hot or well chilled. If using a food processor or blender, there is no need to strain.
