Apple Brunch Strata |

1/2 pound sausages
1 loaf French bread, cut into cubes
2 cups apples peeled, cored, and diced
1/4 cup sliced green onions
1/3 cup sliced black olives
1 1/2 cups shredded cheddar cheese
2 cups milk
8 eggs
2 teaspoons spicy brown mustard
1 teaspoon salt
1/2 teaspoon pepper

Cook sausage until brown. Drain on paper towels. Set aside. Coat a 13x9 inch baking pan or dish with cooking spray. Spread half of bread cubes over bottom. Crumble sausage over bread. Sprinkle with apples, onions, olives and cheese. Place remaining bread over top. Beat together milk, eggs, mustard, salt and pepper and pour over bread. Cover with foil and refrigerate about 4 hours or overnight. Bake covered at 350°F for 45 minutes. Remove foil and continue to bake 15 minutes longer or until center is set. Let stand 15 minutes before serving.
