Melodee’s Mushroom Medley

1 onion, chopped
1 cup butter
1 (14-ounce) package herb-flavored stuffing mix
3 cups button mushrooms, sliced
3 cups portabella mushrooms, sliced
3 cups morel mushrooms, sliced
1 salt and pepper to taste
1 dried parsley to taste
1 (10 3/4-ounce) can cream of mushroom soup
2/3 cup milk
1 egg, beaten
3 cups shredded Cheddar cheese


Sauté onion in butter until transparent; combine with stuffing mix in a medium bowl. Spoon half of mixture into a 13"x9" baking pan sprayed with non-stick vegetable spray; set aside. Combine all mushrooms and seasonings in a large bowl; mix well and spoon over stuffing mixture. Combine soup and milk in a small bowl, mixing well; stir in beaten egg. Pour over mushrooms; top with cheese, then with remaining stuffing mixture. Bake at 350 degrees for 40 minutes, or until golden. Let stand 5 minutes before serving.

Tip: Fringe a square of homespun…a quick & easy liner for a basket of warm muffins.
