Over medium heat, sauté ham and onion in oil in a wok or large skillet until lightly browned. Add mushrooms, rice and vegetables and heat until vegetables are tender; add soy sauce. Make a hole in the center of mixture; reduce heat. Add eggs and stir until eggs are completely cooked, about 5 minutes.
Tip: Try tiny orzo pasta in place of rice for a delicious change in favorite recipes.
