Caesar Shrimp Salad

Ingredients

2 pounds medium shrimp, peeled and cleaned
3 cloves garlic, finely chopped
1/4 cup olive oil
3 hearts romaine lettuce, torn into bite-size pieces
1 (5-ounce) package spring greens mix
1 (5-ounce) package baby spinach
1 (16-ounce) package shredded mozzarella cheese
1 (16-ounce) bottle Caesar salad dressing
1 (5-ounce) package Caesar salad croutons
1 Optional: cherry tomatoes

Directions:

In a skillet over medium heat, sauté shrimp and garlic in oil just until cooked through, 5 to 10 minutes. Remove shrimp; cover and chill. Toss together romaine, spring greens and spinach in a medium bowl. Layer greens mixture, shrimp, cheese and dressing in a large salad bowl; repeat layering until bowl is full. Sprinkle croutons on top; garnish with cherry tomatoes, if desired.

Tip: A crisp, green salad is a refreshing start to dinner. Avoid soggy salads…simply pour salad dressing in the bottom of a salad bowl, then add greens on top. Toss just before serving…fresh and crisp!
