Beef Barley Soup

Ingredients

2 cups carrots, peeled and thinly sliced
1 cup celery, thinly sliced
3/4 cup red or green pepper, diced
1 cup onion, diced
1 pound stew beef, cubed
1/2 cup pearl barley, uncooked
1/4 cup fresh parsley, chopped
3 cubes beef bouillon
2 tablespoons catsup
1 teaspoon salt
3/4 teaspoon dried basil
5 cups water

Directions:

Layer vegetables, beef and barley in a slow cooker; add seasonings. Pour water over all; do not stir. Cover and cook on low setting for 9 to 11 hours.
