Healthy Homemade French Fries

Serves 6

Ingredients:

5 large roasting potatoes
2 tablespoons olive oil
salt and pepper to taste

Preheat the oven to 400 degrees. Peel, wash, and slice the potatoes )the more even the better). Once sliced, place the potatoes in a bowl and cover with water. Soak potatoes in salted water for about 30 minutes to release some of the starch and allow them to crisp up in oven.

After 30 minutes of soaking, dry the potatoes. They must be dry in order to crisp up! Once they are dry lay the potatoes on baking sheet with parchment paper. Season with salt and pepper and brush with olive oil. Place in preheated oven.

Once in the oven, ensure that you turn them periodically to ensure even browning. Bake for about 45 minutes or until golden brown.
