Insalata Caprese with Avocado
I've had so many requests for this recipe. I never realized how many people truly enjoyed the small change-up on this popular salad.
|2||avocados - peeled, pitted, and cubed|
|1 1/2 tablespoons||lemon juice|
|4||large tomatoes, cubed|
|1 pound||fresh mozzarella cheese, cubed|
|1/3 cup||basil leaves, thinly sliced|
|3 1/2 tablespoons||extra-virgin olive oil|
|1 pinch||fine sea salt to taste|
Combine avocados and lemon juice in a large bowl; toss to coat. Add tomato, mozzarella, and basil; toss again. Drizzle with olive oil and season with salt.
