Lemon rice goes with Greek food, in my opinion. Or at any time. Such a light and tasty recipe.
Dovetailing tip: Use 2 cups of cooked rice. Saute the onion, Add the cooked rice and with the rest of the ingredients except lemon pepper. Heat, then sprinkle with lemon pepper to serve.
|1/2||medium onion, chopped|
|1 cup||chicken broth|
|2 tablespoons||lemon juice, freshly squeezed|
|1 cup||uncooked rice, long grain|
|1/4 teaspoon||dried basil|
|1/8 1/4 teaspoon||lemon zest|
|1 1/4 teaspoons||lemon pepper seasonings|
Melt butter in saucepan. Add the chopped onions and saute until translucent.
Add remaining ingredients EXCEPT lemon pepper to saucepan.
Bring to a boil, then reduce heat.
Cover pot and allow to simmer slowly for 20 minutes, or until liquid is absorbed.
Sprinkle with lemon pepper before serving.
