Fudgy Gluten Free Brownies

You will not miss the gluten in these brownies. These are some of the richest, fudgiest, most decadent brownies I've ever had. My dear friend was kind enough to share this wonderful recipe with me. It is definitely a keeper in our family from now on.

Cook Time: 25-30 minutes


4 ounces unsweetened baking chocolate
3/4 cup butter
2 cups sugar
1/2 teaspoon salt
3 eggs
1 teaspoon vanilla
1 cup gluten free flour
*If you do not have a mix that includes xanthan gum, you will need to add 1/2 teaspoon of xanthan gum


Preheat oven to 350 degrees. Spray 9x13 pan with cooking spray. Melt chocolate and butter together in a microwave safe bowl, stirring frequently just until chocolate and butter melt. Stir in sugar, vanilla, and eggs. Mix well. Add flour (and xanthan gum) and mix until incorporated. Spread brownie batter into prepared pan. Bake for 25-30 minutes. Do not over-bake.
